Why would you pointlessly add letterboxing?
Surely the entire point of letterboxing is as a half-solution for when the aspect ratio doesn't match.
Adding pointless letterboxing is like a healthy person taking cough syrup... I could understand if it's in a cutscene to signify the transition of game state, but otherwise it seems like a really dumb thing to implement.

What I'm doing in my game is quite similar. But it's less skateboarding and more welding tornado sirens onto severed heads.

Based on how buggy most skate games are I'd say it's really hard. I think it's the same type of problem you have with sports games where you have to have your controlling entity attached to another (the ball, skate, whatever) + you have to have realistic physics. Whenever I get into this kind of stuff in my games it can create some really unintuitive bugs and I can see how skate/sports games get into similar problems. If you need to make it multiplayer then I can only imagine it's like 100x harder.

Vertices can be set to be ignored by the physics mesh generation (blue verts) which makes it very easy to create ramps for stairways.
