Because they are more efficient, they look nicer (if done right), and it is possible to make many more things with models than with brushes.

I never told you to texture for our models; I would have to send you the model, you would have to UV it, etc.
I said you should just do the texturing for brush-based architecture. (Floors, ceilings, walls, bridge-ways, Blah-blah-blah)

Model texturing isn't as bad as you might think. Basically, you're given a reference texture that was generated in the 3D modeling program, with a bunch of shapes on it. These shapes are flatted parts of the model, for example, a circular roof in the model will look like a big circle on it. It's all a matter of figuring out what is what in comparison with the model itself, which is why I always have my model open in 3ds Max when I texture models, but that's just me.

I do the same thing, but in order to know what parts go with what, he would need the model itself to see the UV correspondence.

Yes, just a dark olive green for the diffuse texture and a noise texture for the bump map.
