I am completely lost. I have been walking for about 7 days (game time) and I haven't seen a single player, resource node, animal, houses, zombies, or radiation.
I have no clue where I am. I tried to reference the mountains around be by using the map on wiki but I am still lost.
I am on the US Official PvP server.
Any help would be great appreciated.

You probably might have gotten out of the spawn zones. Try pressing F1 and then suicide in console to see if you spawn back somewhere with things.
That's the thing. I have a ton of resources on me. I really would hate to suicide since I have been working so long for what I have... I tried the stuck command and it didnt do anything for me.
You can't really go wrong by heading South West until you hit the coast or at least see it. Use the rising sun as a reference for East. Eventually you'll be able to navigate around just by landmarks etc but this tip really helped me when I started.
They removed the stuck command due to it being abused in raids. You could try to go to the water, then travel away from the hugeass mountain alongside it.

Yeah I am near the coast now... I guess I will just keep walking until I stumble upon something or someone.
Well. Did you ever make like a base or shelter before you started out on a adventure looking for resources? If so and you had a bed. Really if you wanted to you could go to a spot you know kill yourself then use the map then find your body. Not sure if this helps im just giving ideas.
Yes I made a base. I have a lot of supplies on me so I dont want to die. I have no clue where I am on the map. I walked from the west coast to the east coast and saw not a single person, animal, house, or resource node. I am walking back to the west coast hoping to find someone or something.
I am connected to the server and I can chat and such.
