Sorry, but you can't.
You are stuck with what you rolled when you purchased the game, and it is bound to your steam account.
The good news is that when the devs update playermodels and such, they sometimes have to reroll the player characters. So what you have now may not be what you have when the game releases.
The official stance from the devs is that you will never have a choice.

Technically, the only way would be to make a new Steam account and purchase the game on it. But even then its random. Character gen is tied to your SteamID, a set of numbers generated on account creation that cannot be changed and are different than the Display Name, which many believe to be the SteamId.

op, they are also overhauling the gender models pretty regularly, which does screw with the seeding for the player model; in other words with every update to the gender models, there is a chance that you will end up with a different result.
but no, the team have literally said "we aren't taking the choice away from you, you never had one".
