So I got the PHX pack and have been fooling around with the train packs, but I find it frustrating because my trains keep derailing. Can anyone offer any suggestions to keep trains on their tracks in GMod?

Use the WeightSTool. Play around with it.
If you get it working, Put a ragdoll in it and put a wiremod sign on it that says,
"Oh let me tell you of a story of a man named Charlie"
