1. when im using a default gun, such as the physics gun, i have this 5-dot reticle thing. how do i remove it? i know you can because ive done it before.

Officially there is no GMod 10 or 11, those are just nicknames, the real name is just GMod. I think the current nickname is actually GMod 70.
Edit: Meaning that anything that runs on GMod 10 will (should) run on GMod 11 since one is just an update of the other.
You might have the crosshairs addon as the problem for the first questions.
Assuming you mean the default 5 dot cross hair:

If you have an add-on replacing it, delete the add-on for it (Or the folder in the materials folder).
