But seriously, my graphics are turned all the way up and I have ant-aliasing activated. I can't change what type of file Gmod saves my screenshots as.

yes you can
you can use the commands poster, devshots_screenshot, jpeg_quality 120 to make good PNGs, TGAs and loss-less JPEGs, respectively.
