To be honest it really shouldn't drastically, other than AO, volumetric lighting and the ability to have non grainy soft shadows SFM unedited looks about as good as any gmod pic.

Don't forget that maps compiled for SFM tend to get the benefit of a new and vastly improved compiler. Just compare CS:GO maps with CSS ones. There just isn't a way to make comparable looking maps on the older engine. The improvements to vrad are huge. I'd even go as far as to say the base renderer is way better even if AO is off. If I plonk a model into SFM it just pretty much always looks better compared to gmod.
A shit model is going to look shit regardless of the program honestly, just because it's got some AO slapped on it doesn't mean it's going to make horrible shaders look better.
As someone who was a dedicated gmod poser before switching I can say the difference between the two is over exaggerated, but that's just what I think.
