I need to know how to do this on a listen server, so which code to edit in my /common/garrysmod/gamemodes/terrortown/ etc

In the init.lua you can probably just put ply:SetModel("models/something.mdl") if this doesnt work i'll look in the files further and see if somethings overiding that
E.G

Just change 'local mdl = GAMEMODE.playermodel or "models/player/pheonix.mdl"' to 'local mdl = "path/to/model.mdl"'
