How many vertices do Garry's Mod models need?

As many as you like but usually above 3.
Remember there's a 10k poly count enforced by the engine, although I think it's possible to compile up to 30k.

My Dodge Charger is over 32,000 and compiles fine every time, it's slow but it works.
I guess it varies then. Also as a side note to OP, I was talking about triangles, not vertices. All ingame 3D is measured in triangles since the game engines tend to triangulate the meshes.
