First of all, I do not hate custom modeling and have used some in the past but I've had a nagging question, if custom models only work for those who have it, how do you show off custom hats and such if you or anyone who, on the slim chance, has the same model as you?
You install custom models to make the game prettier for yourself, not for other people.

I don't like the way the soldier looks, so I download a custom skin for the soldier which looks better in my opinion.
It's all a matter of preference.
It's just the way all custom stuff like models and textures work.

for skinners and modelers themselves it's a sense of satisfaction and signature looks.

I use Reskins because they're just eye candy.
The Medal was looking plain, and I thought the TF logo would be better on it.
It's a small change, but I do it because I just fucking can.

Custom models are a no no in competative gaming, so i've never used them. Game already looks awesome and there's no point in using them when no one else can see them. Not to mention getting buttfucked when you're playing on a server with sv_pure...
HDR re-skins that make the game jizzalting.

Comp uses sv_pure 2 to ensure that nobody could possibly be using any sort of material hacks no matter how unlikely.

I use the 50 Cal sniper rifle because it just looks and sounds so fucking epic. And the Sniper looks beast holding it. Also, Acidic piss jar.

the reason i don't use custom sounds. cause most servers have sv_pure 1 and gives me that high pitched squeel
I downloaded this sexy water skin right, I went to test it out on a 2fort server, jumped over the ledge with a huge smile on my face hoping to see some sexy water only to see water as a wireframe. I don't understand why Valve would make it like this, should be Sv_pure 0 and Sv_pure 2.

you should be bitching at valve for making sv_pure's default be "1" in the first place
Oh well, Valve did a fantastic job with their default skins and sounds. Nothing beats the sounds Natascha makes. Sv_pure does stop me from downloading any of Daimao's/Royzo's wonderful hats. :|
