Is there a command I can put into TF2's console or startup options that changes it to a specific resolution?
I have a 1920 x 1080 monitor, but running at full screen eats at framerate and running at the second highest setting (1360 x 768) is much too small.

-h
these work
-h 1920 -w 1080
Try that
launch options
-w XXWIDTHXXX -h XXHEIGHTXX
