So today I actually decided to play vanilla, but I realized I suck at it, so I need tips on how to improve and what class to try first.

Vanilla, but for what class?
I am good, for example, with vanilla Scout, Heavy and Medic, but terrible with vanilla Pyro (I'm really used to equip my flaregun and my homewrecker and play defensively/friendly)
Scout is possibly the most rewarding class to play. In my opinion it has one of the highest skill ceilings and requires thinking (AKA not fucking rushing in front of 5 people and actually attempting to flank) and skill, both in prediction of the enemy and where they're shooting and having good aim while still moving around quickly.
Not to mention, if you can get another fairly good scout to work with you, you can obliterate an enemy team.

I don't play much with Scout, but when I pick up him, it's really surprising how the pistol can deal so much damage in medium/long range (Around 8-13 hp, compared with the mediocre 3 hp of the scattergun, specialized in close range shots).
Something similar happens with the Spy's Invisibility Watch. The cloak lasts "very much", and if you know the map and the location of all the ammo packs you're a total stabbing machine.

In that case, you suck so much it isn't even funny. Stop playing custom maps all the time and you wouldn't have this problem, the stock maps are usually better by far.

By "vanilla maps" you mean 2fort, Dustbowl, CTF Well, Hydro, Gravel Pit and Granary? The only 6 maps that came out with the original game?
Vanilla Demoman is probably the best choice to start with, because he's the only class who have no upgrade unlockables. All of his unlockables are mostly items that are more fun than they are useful, and therefor he is the most efficient played vanilla. The Sco-res is an exception only on defense.
Walk around with the Nade launcher when you haven't spotted an enemy; it explodes on impact and doesn't require manual detonation, therefor it is more suited for surprise attacks in medium and close range. When being attacked by an enemy at long range, it is also very useful for spamming nades under their feet.
The Sticky launcher is very useful when you've spotted an incoming enemy at medium or long range. As the bombs have a certain time before you can manually detonate them, they are less suited for surprise attacks and in close range. You can however protect yourself in close range if you plant them while the threat is still in medium range. They are also very useful for enemies at medium range, as long as they don't get too close to you. Spamming stickies is especially useful for large groups, and also for Heavy + Medic pairs.
The Sticky Launcher is obviously very useful for making traps as well. A very good strategy to do while fighting offensively is to shoot stickies at the enemies escape route, then spam nades at them and finish them off with the stickies when they retreat due to low health. Offensively they are great for protecting the point, and generally just sealing of areas of attention. When placed on a point you don't always have to hide them, just the sight of them can scare enemies away from it. Hiding the stickies is very good when making traps for taking out large groups of enemies however.
The Bottle is no more than a last resort item, I do not advice using it for more than Spies, or perhaps when you have to fight an enemy in close range while you need to reload your pipe launcher.
However it is preferable over the Eyelander and Skullcutter due to that their decreased health and speed can be rather crippling to your mobillity and survival.
I've always played vanilla demo anyway. I have a very strong hate for demoknights.

Same here. Except for the melee weapon: I normally like to use the Pain Train with him, and in CTF maps that don't need it, I use the Pan (which is basically a reskin of the bottle)
Yeah, the pan is a reskin. I still prefer it over Ellis' cap, you can actually see it in-game, without having to taunt.

You mean the one used on the CP version, that has a central building on the middle for the neutral control point, instead of the plain terrain with only a train, right? I didn't know it was used in the CTF version too, or I forgot.

Sometimes, when you know a guy is damaged or only have one shot at killing him, a headshot is not the right choice. Like when you're trying to take out a medic, scout or a really good sniper, better to just bodyshot him, much better chance to succeed and then proceed to headshot others.

Most enemies unless overhealed die form a fully charged shot anywhere. It is better to know you hit the target than to risk missing and giving yourself away. Heavies on the other hand are a good idea to headshot due to their slow speed.

If you can headshot quickly, then waiting for a charge shot isn't necessary, unless taking out a heavy.
