How can I get a grenade kill (Taunt Kill, even.) When I'm an engineer?
It credits the kill the same way 'finished off' kills are.
You shot him when when was taunting.

Yeah it's a bug, I once got a "grenade" kill with a rocket.
And I know it registered as a grenade kill (it didn't just show the wrong kill icon) because I got the achievement.
Ok, so it's not just me, then.
I once saw a sniper get a kill with a sentry gun on a vanilla server after the round had ended. So...yeah.

You shot whoever the taunt kill killed.

I've had that happen on the HyperGN server, where sentries swap teams and switch their ownership to random players at the end of the match.
you shot the grenade
Basically the Soldier did that suicide taunt, but your sentry hurt him enough and also survived his taunt. That gave the kill to you.
Last person to hit someone grenade taunting counts as a kill
Here's another thing to note if a soldier hits someone doing that and they don't have spray of defeat they get it
