We don't have one, so I was thinking about starting one.

Loved child has many names. Danmaku, bullet curtain and maniac.
Bullet hell is sub-genre of shoot'em'up. Like the name implies; bullet hell focuses on plentiful enemy bullets.

There are plenty bullet hell-games for PC and consoles. But still, most of the games are from Japan.
Most of arcade-games are produced by CAVE.
You can import some games from Japan.

While games look impossible, it is actually playable due very small hitbox.
Bullet hell-games are quite notorious for being very hard. While you can probably clear Touhou: Imperishable night on normal, you probably cannot never clear Dodonpachi Daioujou or Mushihimesama. There are only five persons in the world who have cleared Dodonpachi Daioujou.
Of course, some shmups are more difficult than others.
Smhups usually have different scoring-systems, so only shooting enemies mindlessly won't accomplish anything. ESPrade has strange special-attack bubbles, Touhou: IN had time-system and Dodonpachi had chain-system.

There are plenty of games.
Touhou project-series, Dodonpachi-series, ESP-series, Mushihimesama & Mushihimesama Futari, Battle Garegga, Dangun Feveron, Ketsui, Ikaruga, Guwange and many doujin-games like XOP Black and Blue wish resurrection.

Well, it can be said that either Mushihimesama Futari or Dodonpachi Daioujou.
Please inform me if you need something to add.
Needs more Ikaruga. Not only is it more familiar to people, but it's easily accessible on Xbox Live. You should definitely mention it.

I found that just holding down shoot and avoiding the bullets is the best way to play these games

Well, you might want to try Blue Wish Resurrection.
It is quite good choice for starters.

Anyone wanting to get started with Touhou should play Imperishable Night, I think it has the easiest easy mode.

That game has some pretty epic boss fights.
Valkyrie Sky is another free alternative. The game isn't very hard, but is a grindfest.
The last closed beta was almost 3 months ago and between then an now gamengame sold their license to gamekiss.
There weren't any updates after a short teaser on their shitty site.

It's pretty fun, and what's a shmup without awesome music? The music composers for the game is the group dBu, who are famous for Touhou remixes as well.
I've got one of the TouHou games , Scarlet devil , and I find it easy on the first 3 levels , until major shit happens and my lives go down relatively fast...
It's quite usual. In Dodonpachi Daioujou, I can no-miss two first stages.
But I get game-over in stage 3 or stage 4.
The whole "100x100px sprite, 1x1 hitbox" thing pisses me off. If I have a 1x1 hitbox, that should be the size of my ship/character/whatever.
