Do you use the right IP? If you have a dynamic IP you may need to give out a new one.
I can barely make out coal from regular cobblestone. Any tips on helping me 'see' it better?

Cobble looks WAY different from coal. What kind of monitor are you using?

Aside from a static IP, does your ISP block any ports?
I have a problem, when I host a server just for me and my mate, the world loads SUPER slow, but it doesn't seem to have real lag.
I've forwarded ports obviously (he can join).

How long does that happen for? Minecraft has a lot of java overhead which really slows things down for about 3 minutes while the world generates.

Oh! Yeah, gravel and cobblestone look fairly similar. If you look closely you'll see that cobblestone's many dots denote individual large stones, while gravel has a purple tint. Does that help?

I'm not entirely sure, I join, it loads super slow, I stick around for a couple of minutes, still very slow, then I'll leave and rejoin, still slow.
Then I give up.
But I'll try again now, and wait a while, see how it goes.

What port did you forward? you have to forward 25565.
If it doesnt work, try using Hamatchi with you and a friend to see if its the ports or something else.

When you forward you forward it [i]TO[/i] that IP, not the IP itself :buddy:
