There are these all-glass maps me and a few friends played on CS:S at a lan a few months ago that was fun as hell.
Me and my buddies always play Hidden: Source whenever we have a lan. Shit's so tense nearly all of us end up screaming and shooting wildly around us at some point. Hilarity always ensues.

But also, Battle for Wesnoth is a lot of fun to play on the LAN.

All C&Cs are awesome, though I don't know about the last one. What was it called, Renegade? Yeah that was it. I don't know if it'll be nice for LANs, but all the others will be. Eugh reminded me how the series died with Renegade.
Ooh, there's also Generals, it's a nice RTS game, though Vanilla's a bit unbalanced :|

Yes, this.
Also, I'd only do versus if you have 4+ people. Even with four or six people it's kinda slow paced but it shakes up the game enough to get some more playtime out of it.
