Ragdolls are unbreakable in their ragdoll form, But some of them are when spawned using prop_physics_create. (prop form)
That does not apply on the official HL2 models, but some custom user-made models do exhibit this behavior.
Tested thoroughly with model manipulator on gibbable NPCs, prop_physics_create, host_timescale 50 and a crowbar.

The wiki is more about source engine mechanics than lists of props, so I don't think it would fit very well.

Why not ? I don't see any problems if you simply create an article called something like "Breakable Props In Half-Life 2" and paste that list in there. It's pretty useful from what I can see.
This is actually quite useful, if I needed a specific type of prop and a breakable one at that, I know which ones to look for.
