Depends whether you want the "Find a certain animal and shoot them" or "Get thrown in a hunting grounds, don't starve or die. Good luck" sort of game.
I always liked the hunting parts of The Oregon Trail, Deer Hunter is also fun.
If you want to get technical, GTA is one of the 'best' seeing humans are animals.
Far Cry 2, if you can manage to avoid all the people. Which is wholly impossible.
This games a good and quite long hunting / camping game. you wont probably find a better one so get this.

Try setting it to the lowest settings. Maybe it'll work. You never know..
Hunting unlimited, or Hunting Unlimited 2. Great games, also includes a scenario editor. You like bears rushing your beloved hut?

The just cause engine isn't very demanding. I remember playing just cause on my old x1600 rig.
The Hunter is awesome! I had like 200 meters left to walk so I climbed in a tower and waited. Then I finally saw a deer for the first time and shot it.
Just tried Hunter Unlimited. Overall not a bad game. But whats with the game's soundtrack? Why is it always trying to scare me? I keep hearing those tense music thinking that there's a bear charging at me.
