Just got an email confirming my xbox live subscription was renewed. I don't remember doing this, is this automated or did I choose to have it automated at one point?

yes all of them are recurring until you cancel it.
And if you want to cancel it, If I remember correctly, it takes the piss to do so.

You can change it on xbox.com, I don't remember how but I did it like last month or the month before.

I removed my debit card and got suspended for a few days, until I rang them.
You could try getting one of those 3 month codes then remove the credit card from your account which is what I'm going to do. Even if you phone up and go through all the procedures it ends up taking 30 days to remove the card.
You need to go to xbox.com to turn off auto-renew, you'll need to manually turn it off everytime you renew your subscription using a credit card.
