Recently, in my main minecraft world, I have been using up tons of cobble stone to build my city, so I've been mining so much
I am going through my mines a lot, but in the 6 2by2 branches that go in 50 blocks deep I have gone through I have gotten a stack and then some diamonds, which is currently more then all the stone I have. I love diamonds, but I need stone god damnit, not these worthless diamonds. I can't build with this.
I agree, stupid diamonds
Make a giant hole in the ground then. 10 by 10 straight to bedrock.
Make a quarry far off from your town, its not hard to do
all the stone will probably just be fucking diamonds
Besides, I like to have my mines uselessly organized

It wastes a lot of space and it costs a lot of materials to keep the rails going and the wood on the way, but once I hit a big cave system or lava pool, I turn my mine in the other direction at the start, take up all the wood, rails, and torches (mabye leave torches, but mobs shouldn't be a problem anyway)
And I might do the quary, but I like to have everything organized and symmetrical
Quarries can be organized. Just plan it out, and bring lots of TNT.

Oh, and don't fall in.

"I don't want your damn diamonds, what am I supposed to do with these?!"
If you've got more diamonds than stone, couldn't you just use them to build one big diamond castle and just add to it when you need to?
You can craft diamond into diamond blocks you know.

This, I usually make signs and label each part of my mine, each separate quarry within my quarries have different names. I then make a different note mentally which mines I am working on and which I have stripped for materials.
You should bring about 120 blocks of TNT. Dig a 2x1 hole (so you're never digging straight down) all the way to bedrock. Fill it up with TNT on your way up. Wire it up to a button on a cliff with a fantastic view. Detonate at sunset.
That should give a nice quarry, a bit of lag and plenty of stone.
There is a 0.5% chance of hitting a diamond every 500 blocks at diamond level. or something like that

Really? That can't be right, seeing as I have mined a total of about 54 Diamond blocks from my mines whilst only using up 2.7 diamond picks (around 3k blocks if a diamond pick = 1.3k blocks or some shit). Whereas if it was 0.5% per 500 blocks I would have around a 3% chance of hitting diamond so far, even less if you count all the mining done above layer 16.
All the math in this post is approximate because I can't remember exact values.
I just memorize which mine goes where. It aint that hard
Go find a mountain and take it down, or get some tnt, if there is no need for dirt dispose of it.
For the diamond you should make a castle and make the diamond into blocks and make a chair for the king to sit in, kings are wealthy.
