Assassin’s Creed Origins is, of course, an M-rated game, so sculpted breasts or genitalia would otherwise seem to be of trivial concern to a game with heavy amounts of violence. (And characters appear nude in the main game, too.) But the reason appears to be the T rating this module sought, in order to make it acceptable for educational use.
Here’s an example, right at the beginning of the tour, in Alexandria with Cleopatra as the player avatar. Seashells cover the breasts of a generic statue. In other instances, a larger shell is placed over a statue’s crotch. The main game features nude statues, including ones showing male genitals.
Polygon reached out to Ubisoft to note the changes and verify that they were made to hit a lower age rating. An Ubisoft representative responded with this statement.
Discovery Tour was created to offer the maximum amount of people from various ages and cultural backgrounds the ability to visit the long lost world of Ancient Egypt and learn about its history. We worked hand in hand with educators and academic institutions to tailor the content to be suited for every audience, including younger students, taking into account cultural sensitivities that can be different from one country to another.

The US has kind of a problem with censorship of books and whatnot so I would not be surprised if this extended to to art as well, if only by avoiding the display as much as possible.

I doubt it, I'm sure it's just a lack of the ESRB having common fucking sense if anything. If the ESRB were to rate the game M due to the nude statues like the morons they are, the school's wouldn't be able to use this mode in their classrooms, so Ubisoft was forced to make these changes I guess.

And yes, they would freak the fuck out over this. If the schools themselves didn't, then you'd have braindead parents freaking out over it.
My 8th grade history teacher covered up pictures of eg the statue of David while showing us a book about Renaissance art so yeah this is a good call
The issue here is less about Assassin's Creed and more the pants-on-head braindead mindset about nudity in a lot of places.

Some states in the US have an insanely puritanical outlook on things like sex and nudity. So it seems like this is just accomadating to the lowest common denominator

sometimes schools don't give a fuck about ratings, though. i remember in middle school having a sort of celebration day for some reason where we had rooms set up with xboxes doing system link of halo 1 and 2.

When I was in high school there wasn't very much nudity censorship. I can't recall any historical paintings with nudity in it that were censored in powerpoints or anything. Hell, my 9th grade English teacher even showed us the 1968 version of Romeo and Juliet which has nudity from two underage actors in it. I suppose my experience must've been the exception.

So, you're telling me, in a series known for having violence and graphic (are we forgetting when we had to watch Ezio's family all getting hanged?) images and also has the M rating on all of their games as far as I'm aware has to censor some boobies or penis that aren't even real and are made of marble?? I know it's supposed to be for "educational purposes" but good god. This is just dumb. Are we supposed to pretend they aren't there or something?

Usually very poorly with the occasional exception. Parents typically have to sign a waiver saying that they'll allow the school to teach it to them or else the student will have to spend the class time in the hall or in a different room. That's if the school even teaches anything and doesn't just say "Sex is bad, don't do it" and leave it at that.

If you bothered reading the article you'd actually see the reason they state as their own.
Oh and Origins also has some pretty brutal story content [sp]like a young child getting thrown into the Nile river with rocks tied to her feet[/sp] but the discovery tour disables all story and combat content. It is purely an exploration mode with educational stuff thrown in, for schools.
