• Emulators with the game launch menu included?

I've been searching for something like that for a long time. Do emulators exist that emulate the complete console, including the menu in the PS2 for example? Can't really find anything useful in google. I wanted to try the PS2 and the Gamecube because I never had neither of those consoles and my money is kind of gone on more important things.
They do, but you need to provide that yourself, with your own PS2/GameCube BIOS if you want to do it legally.
I'm pretty sure Dolphin can do it for Gamecube. There's a setting in there that says Skip BIOS or something along those line. Just uncheck that and you should be good.
PCSX2 is a ps2 emulator that has the menu.
