So here are my specs.

So the kind of games I play are Age of Conan, Crysis 2/3, Source games, etc fps.
Was thinking GPU but at the same time my CPU isn't too high up on the CPU benchmarks.
If you needed to upgrade, I'd definitely go for the GPU
2500ks are still plenty powerful today
Also it seems that speccy doesn't show the exact card i'm running. My card is a Sapphire AMD Radeon HD 6950 2GB GDDR5.
I would say you could overclock the CPU and get a bit more kick out of it, but then I saw you have a B75 motherboard. At most you could possibly bump the bclock up.
So do what? New mobo and O-clock or new gpu?
I don't really see a reason to upgrade, especially if you are just playing those games.
Why not upgrade audio, or get some new peripherals?

Because I can't max out games like crysis 2, only can set it to extreme and could never record videos doing it, barely get likr 40-50 and when I record it drops the frames down to barely 25 and the file is giant. So I was thinking bumping to a 7970 for example would make a big difference.

What are you recording to? Video recording is heavily tied to disk I/O
Recording to the same drive as the game you're recording can cause crazy FPS drops if your drive can't keep up
If you are using fraps, you should try DXTory instead. If I want to record BF3 on Ultra @ 1080p with fraps, I'll drop to just over 30 fps and will experience skips and occasional fps drops down to 20 or so. However, with DXTory I get almost the same FPS as I would if I weren't recording (about 50-60) and can actually play without skips or FPS drops. If I can do this with a GTX 660 and a AMD Phenom II X6, I guarantee you can with your system.
From what it seems like I should get a bigger SSD, new mobo so I can OC my cpu well.

Not really. Only if you do extreme overclock. You will be fine. Getting a good mobo for overclocking is more important than new RAM.
And as Cjmax said, use Dxtory, get a new SSD or new HDD for recording. Recording to a drive that can't write very fast will give you worse FPS.
You could just go with a new SSD+HDD if you feel like it. A new HDD for recording will certainly help either way.
Well what I was thinking, go for ASUS Sabertooth Z77, take my 2 SSDs in raid 0, 1tb drive for backup (maybe get 2TB? :o) and etc junk.

You don't really need the Sabertooth unless you really want it. The P8Z77 Pro will be just fine.
For HDD I would highly suggest WD Black 2TB. You will get 140MB/s in write speed.
Ok also I did choose that exact drive you're talking about. But just to make sure, is my ram 100% fine? I plan to take my cpu to like 4.5ghz and what not. (BTW I do have proper cooling for it). My ram is G.Skill branded, cheap but works. two 4gb sticks and two 2gb sticks.

One last question actually, when I OC, I have to step up slowly don't I? I can't just skip to 4.5ghz and try booting? I would think the mobo would have a heartattack and send me back to the bios with defaults.

Overclocking changed when they they introduced Sandy Bridge. You basically just boot into the UEFI and select 4.5. Asus has a really friendly UEFI which is why I love their mobos.
You can also use Asus AI Suite 3 which overclocks the board for you and find a stable spot. It's reallllly handy.
