Medium Rare is the best for most steak meat, when you get into the higher grade steak meat rare is good.
If I am ordering a steak at a restaurant then I will likely go for rare, but I typically cook mine to a medium rare when doing it myself.

Anything involving ground beef I get well done, though, because it's just not safe otherwise.

Call me a sinner but I like mine medium-well~well-done, I just don't like rare meat. And if you call a well-done steak leather, you've not had one done right. To most people well-done means burning the shit out of it which is wrong, to do well-done right you let the steak hit room temp throughout the whole thing, then you sear the outside of the steak on high heat, this isn't to "keep the juices inside" its more because you can't do it later on because it will just burn, once the outside is seared you then cook the steak over a lower heat and ensure the heat passes fully through, aim is to cook the steak evenly throughout the whole joint, not to throw as much heat as you can to ensure the centre is cooked while turning everything else to rubber. Once its been left for an hour or two, with turning every 10~15 minutes, the steak should be done and still be juicy while also being thoroughly cooked. While making a steak well-done "can reduce the flavour" and change the texture, if you don't know how to do a well-done steak right you don't know how to cook a steak, you should know how to cook at steak to all levels of wellness. Also in my personal opinion, having a steak rare is just wrong, its just a lump of near-raw meat with the outside caramelised, it misses all the texture that heat gives.
As close to raw as you can get it, please. The cow didn't die so you could burn all the taste out of it.

Fillet mignon for example.

Fillet mignon for example.[/QUOTE] Yeah I agree with that, the more tender the meat it the less you should actually cook it, cooking it too much does just destroy what is good about it, stuff like matsusaka beef should never be well done, medium at most because it cooks so easily. But for the average steak, doing a good well done steak is just as good as doing medium-rare, I just don't like rare when it comes down to the average cuts. [editline].[/editline] Expanding on this, venison steaks should never really be done over medium rare otherwise they do just turn to tough rubber like texture, venison doesn't react well to long term heat while beef is fine.

Undercooking it leaves the meat with an unpleasant texture and a raw taste. The meat must be thinly sliced (3-5 mm) and quickly seared on both sides: this ensures the beef cooks evenly while allowing the flavours to develop. Some people prefer such beef blue-rare: I think such preparation is best suited for fatty seafood such as tuna belly and salmon belly which have a smoother texture. Generally speaking, I'm not a fan of rare steak as the meat has not been sufficiently cooked to allow the taste and texture to develop. Medium rare is ideal. However, I don't look down on people who prefer well-done, and I agree with some of the posters above that most people think well-done beef is rubbish because they've only ever had overcooked well-done steaks. The proper way to cook beef well-done is to slice it thinly (as above with highly-marbled beef) and sear it quickly. This is in fact how stir-fried beef is cooked, and I don't think many people complain about stir-fried beef being "leather" (at least not if it's done properly).
Tradition: {For Skillet} 1. Get the steak, 2. Marinate in 1 part worstechire, 1 part Italian dressing, add garlic salt and pepper 3. chop cloves of garlic (3 almond sized things will do, depending on the size of the steak, don't want to oer do it. ); Onions, Mushrooms. - Anything that fits your fancy goes here. (Belle peppers, zuccini, Orange?) 4. Turn burner to high with dry Skillet on there, let it heat up. 5. Drop marinated steak in pan for 3 seconds both sides to sear in flavor. Promptly remove 6. Add in chopped garlic and Basil, pepper and butter or olive oil, let them juices toast and leak all over ya pan, roast the fuck outta the garlic. 7. Sautee veggies. (If you want to remove them at this point you can, if you do, repeat step 6) 8. Add marinated, seared steak, Cook to juicy perfection in Skillet, (just keep checking the inside of the steak for pink)

I used to hate steak because my grandparents would always give me well done steak when I went out to restaurants. Now it's one of my favourite foods.
I used to like my steak well done. Now a days I like it medium rare. Though granted, "steak" usually amounts to whatever the local grocery store has on hand. I tend to cook mine in a hot frying pan. I just sprinkle it with salt and pepper and cook it a couple of minutes until each side has a crust. Then I add a small pat of butter to the pan and cook it for like 15-30 seconds more on each side.

Frankly I want a wood fireplace open enough to cook steak right in my fucking livingroom. Best way to do it, hands down. Medium rare, light garlic salt, rainbow assortment of peppercorns.
