I'm always looking for more awesome and useful apps for my Mac, so I figured we should have a thread to share our favorites.
Some of my favorites:
Adium (Instant Messaging)
Colloquy (IRC)
Schoolhouse (College/High School Manager)
iTerm (Terminal Replacement)
Transmit (FTP/SFTP/Etc)
Coda (Code Editor)
Expresso (Code Editor, similar to Coda)
Sequel Pro (MySQL manager)
Pulp (News Reader)
Transmission (Torrenting App)
BetterTouchTool (Add functions to your trackpad)
Alfred (Spotlight replacement)
Carbon Copy Cloner (Clone your HDD)
Billings (Time tracker)
CleanMyMac (Clean up useless stuff laying around)
DaisyDisk (See what is taking up space)
Pixelmator (Photoshop Lite)
Screenflow (Screen Recorder)
Skitch (Screenshots)
VMWare Fusion (OS Virtualization)
A few of my favourites you've already mentioned, so:
GFXCardStatus (Manage internal graphics switching)
Blackout (Makes screen darker at night based off a hotkey)
TotalFinder (Chrome like tabs for finder)
Sleepless (Turn screen off but keep Macbook awake when lid closed)
Forgot about GFXCardStatus, so handy to have.
I personally love:
Evernote (note taking with internet syncing)
Twitter (dunno lol)
NetNewsWire(RSS reader)
Middleclick (opens links in a new tab with 3 finger tap. This can be done with BetterTouchTool but i prefer this)
AirPrintActivator(Shares my network printer with my iPad)
Pages, Numbers and Keynote (Apple's Office apps)
Dropbox
The Unarchiver (better unarchiver app)
MagiCal (puts a calendar in the menubar)
FantastiCal (Create calendar events via natural language input)
My final suggestion is also to never install flash, and for flash websites, just use Chrome. I prefer Safari anyway (though the latest update is really pissing me off now) and when I hit flash content, I just click 'Open in > Chrome' in the menubar. For Youtube videos this extension (http://www.verticalforest.com/youtube5-extension/) turns them (and some other video sites) into HTML5 video, and you'd surprised at how little you actually need flash.
Dr Egg: The Safari extension Click to Flash also provides the same HTML5 functionality
I've not really looked into that tbh. I used to run ClickToFlash, but this way is more honest. Also I'd like to add ControlPlane to my lift. Changes stuff depending on your location, so for me when I arrive at uni (which is detected through scanning for my Uni's SSID), my Macbook automatically mutes itself, changes network location so I use the uni's proxy, and auto opens my note taking app. I only found it today too
Hey, i looked at ScreenFlow but apparently it costs, anyone know a good free alternative?

I heard Jing is pretty decent for a free option
I'd also suggest using Synergy if you've ever felt like you need to use a full length keyboard and mouse from your PC on your Mac - http://synergy-foss.org/
Any recommendations for torrent clients? I've used Transmission for ~2 years but it keeps grinding to a halt and beach balling all the time now
uTorrent.
Also, ( sorry for bumping ) what is a good app for say... setting a timed event? so i add an event for 4:00 and at that specific time it will pop up with a notification?
iCal can do that.
iCleanMemory is awesome!!!! Really great to clear up memory after slow tasks or games, instead of restarting
