So at the moment I'm running 2 AMD HD6790s in Crossfire

Just wondering if it would be worth it right now to upgrade both cards, or get rid of both and replace them with one new card. Would I see a noticeable difference?
That depends. What is your budget?
around ~500-600

replace it with a 780

What currency? If that's Canadian dollars or USD, the 780 will be slightly out of range. The next best thing for you would be a 770: http://ca.pcpartpicker.com/part/gigabyte-video-card-gvn770oc2gd
And yes, it would be worth it. The 770 is an excellent card.
