I get the feeling this is more of a 'cant' than a 'wont'. They really dont have anything to lose by allowing it.

No but it makes them look like dicks.
Allowing friends to play together on different systems is huge. I wanted to play pc Minecraft with my friends who had it on Xbox and ps4. I know a lot of others in this situation.

Is it really a "can't"? Plenty of games have cross platform, Artemis Spaceship Bridge Simulator works on Windows, iOS and Android, and they can all play together seamlessly

AFAIK there is no technical issue with this.
Their official explanation is that they have no oversight over players on Xbox Live which is kind of flimsy imo
My take: they wont't do this because having friends on a certain platform is a huge selling point nowadays.
Minecraft is especially popular with younger gamers whose first console might be a eight generation one. If a kid wants to play Minecraft, their parents would buy whichever console is cheaper/better according to them. If his friends also play it then its a settled thing, he gets whichever his friends have.
