I don't want to change the CPU. GFX card can be changed, but has to stay Nvidia.
What do you guys think about the rest?
Why do you need an i7? And if you're getting an i7 get the K version so you can overclock.

System is for a new PC gamer. He really wants the i7 because he wants the PC to last.
And, hes not gonna do any overclocking, so I really don't think hes gonna need the K one.
I also saw that there's a K, S and a version without any letters, what exactly is the difference between these?

I don't really think there is a difference besides overclock capability and the i7 has no performance over the i5 in games and in some games it lowers the framerate. Unless he really need hyperthreading for rendering and modeling it's a waste to get the i7. The i5 will last him a good 5 years before it needs an upgrade and the i7 will be the same.

Plus with the $100 saved from the i7 he could get a 680, a aftermarket heatsink or maybe save up for water-cooling. Or just have $100 for a rainy day.
