I'm curious as to know whether there is a significant difference between the two in terms of speed. Will I ever notice? Also, is cable management significantly easier on either of the two? Thanks

mAtx will just have less slots for video cards and such.

Cable management relies on the case really; size and quality. Very little relies on the size of mobo. I mean yea, if you get a mAtx mobo and a small case, cable management is going to be tricky as opposed to an atx mobo and a full size case.
In my experience, cable management tends to be better on ATX motherboards, mATX tends to have connectors in weird places to save space.
Yes, if you have no issue with having a bigger computer, get an ATX, but if your like me, and desktop is too valuable, get a mATX or smaller.

you can get a full size ATX motherboard and fit it fine into a good mid tower case with room for cable management
