I want to know the logic at play here. Why sue? Is it because the companies want people to buy and play the originals so they get money, and free-of-charge remakes take away paying customers from the original paid game?

Because they need to protect their intellectual property.
Not everything lawyers do is because they're evil.
Fan remakes are sadly not worth the effort in the end because it always gets hammered down by lawsuits.
Why not take the games you love and create something new based on it?
Something original that might insipire future generations AND have something they can sell for profit to finance their next big project!

If memory serves, under patent law if you don't protect your trademark by challenging infringement then you may lose it.
Trademarks have to be challenged, copyright does not.
