2 vs 4 modules doesn't make a difference unless you feel like you want to upgrade past 16 GB in the future or if you have a quad channel system (the X79 platform), so I recommend the second unless either of these things is true since it's a bit cheaper. RAM frequency does not yield a noticeable impact in performance as far as gaming. If your purpose is something other than gaming, than get whatever's cheapest at a higher frequency that has a heatspreader and operates at 1.5V. You can probably get something a bit cheaper than those you listed. Also a high CL can actually overrule the benefits of having higher frequency RAM, so try not to get too high a timing.

I highly doubt you need more than 8 gigs, do you do anything memory intensive?

I just want to have plenty of everything for anything, also thanks for referring me to that PC Part Picker Site, I'll make good use of it.
