It's been a while since I looked at PC parts, so I'm not up to-date with new parts and such. But for his birthday my cousin is got lots of money to put towards a proper gaming rig. I'm gonna help him build it (which will be a learning experience for both of us :v:) He'll also be using it for some video-editing and light rendering.
His budget is about £750, which needs to buy everything needed, including the monitor. But his parents are buying the GPU as his present to him, so that doesn't need to be figured into the budget. Although suggestions on GPUs would be welcome.

750 Watts is a good bit overkill. The Video card uses 170W, so your total system TDP is around 370 Watts. You should go up from that, but as little as 550 or even 500 would be fine.
Are you sure? I used one of those power supply calculator websites and it came out at like 700.
Although saying that I might have changed some parts since I calculated it.
Anything else to tweak on the list?

I just went onto pcpartpicker just to varify (even though there's no way your total TDP is even close to 700). Your TDP is ~350 Watts. The calculator you used probably nearly doubled your TDP because PSUs preform most effeciently at ~60% load. This means that the optimal route is to get an 80 plus platinum PSU that is 40% higher than your TDP; this however will only save you (and by you, I mean your parents) a few dollars a year on your electricity bill from getting just a reasonable amount of watts above your TDP.
