My MSI GTX 260 goes up at around 70-75 on load when playing, is this an acceptable temp? The fan speed is at 40 procent.
Also is there any good cooler you could maybe recommend to replace the stock fan with?
My GPU(4870) sometimes goes to 70c but that's it with 40% fan speed.

That sounds fine to me. My 8400 reaches about that temp when playing games.

My 260 will overheat at anything less than 80%.
Where do I turn it up, I can't seem to find the option for it in the nvidia control panel

The 'x2 is obviously going to run hotter because guess what? THERE'S TWO CARDS.
Anyways, 70c is perfectly acceptable for a GPU load temp.
If you want to control your card fan speed, download RivaTuner.
If you're still worried, get some VGA cooling.
it isn't two cards, it's two GPUs on one card
and it runs hotter than most cards (even other double GPU cards) because that's just the way it is, but the difference isn't really enough to affect anything

The temps should be fine. If you're worried though, you could always crank it to 60-70% with Rivatuner or EVGA Precision but I don't think you really need to.

i'm not a fanboy, I'm fine with both brands, it's just that most ATI cards I've had ran hotter than the nvidias I had. speaking of personal experience, not to make up any facts or any bullshit.

Back on track rather than having a flame war over brands...
Google eVGA's precision software, it is a simple and great free software overclocking utility. From there you will be able to adjust your fan speed. I suggest 80%.
