Because the species had their evolution parted at some point in the history. One evolved in humans, one in monkeys. Ever tried separeting snails from one group in two groups, then breeding them for quite a while? They won't resemble each other at all.
IRL isn't Pokemon, and that's not how it works. Monkeys and humans evolved from a common ancestor. You also don't have to be a non-believer to understand and believe evolution.

Humans didn't evolve from monkeys, they evolved from apes.
And if you want a proper explanation, it's because entire species don't suddenly evolve all around the world. Isolated pockets of one species will eventually develop different traits to others based on the environment they live in. For example, some caterpillars may remain as caterpillars in their environment, because their adaptions are almost perfectly suited for that environment; but other caterpillars might live in an environment where they are not, and that environment will favour the development of different traits in the caterpillars.
