More biomes is a step in the right direction. A mountain biome with really huge mountains would be pretty neat. The current "mountains" are pretty much just hills.
Also volcanos.

Mountains with new ores mountain-biome-specific.
Is there something actually in the works at Mojangs? That'd be great.
If Minecraft got more exciting biomes with crazy tall mountains to take advantage of the increased world height, I'd might give it another chance.
Did they really mention 2b2t?
It's weird how tame the world generator's gotten, it used to be that you'd spawn in a world where you could tell that huge chunks of the landscape had been pulled upwards 50-100 blocks exposing parts of the tunnels and it ended up creating fantastically beautiful environments to build in, like the old Glacier seed.
I recently tried to generate the glacier seed recently, by sheer luck I found the original spawn area with the amazing cliffs and impossible mountains in a nasty swamp biome in the middle of the sea, a number of blocks below sea level so it and the surrounding area were completely unusable. I hope this update goes some way to restoring that landscape.
Would be great if Minecraft started getting the updates it's been ever-so longing for.

Frozen mob fossils in mountain caves. A yeti that guards them.
Alas, these are all ideas that are going be left to the modders to implement
