Figured we needed a few less negative threads in this joint. So, basically like the Things you hate in video games, except the opposite.
I like it when games have adjustable FOVs that also adjust the weapon FOV. I like to not have the weapon shoved in my face. Also, I love really satisfying techniques or skills. There's nothing more satisfying in Borderlands 2 than being Krieg, having a bunch of those rat fuckers gang up on you, then switching on your special ability and smashing their heads in with a flaming axe.

i don't care if it's a gimmick. it's fuckin cool (ex. bullet time in Max Payne)
Beating a really hard boss.
AKA after every boss in Dark Souls (except Pinwheel because he was pretty effortless)
Fitting music played at the perfect moment.
(Fallout: New Vegas) I swear, right when I entered a building full of powder gangers, [URL="http://www.youtube.com/watch?v=iGmUsJvRv7U"]Big Iron[/URL] started playing. I couldn't help but to pull out my 9mm pistol and walk slowly through the building, almost no cover hiding me, and hip-firing.
I know it's corny, but god damn, that was an exciting moment for me.
The history of course.
Sneaking around in Fallout:NV, sniping down bighorners and other evilness, just so satisfying, for some reason.
Character customization. I have yet to find a game that does this perfectly. Dragon's Dogma comes pretty close though.
Games where you unlock wacky and helpful bonuses when you get all the collectibles.
Also games with multiple playthroughs.
When a boss (or final boss) has really kickass music and some badass action to boot
When the Player/Player Character isn't being treated like an idiot.
Lesbian sex.. oops, sorry, my BioWare fan nature speaks for me.
Actually what ThatSwordGuy said, plus if boss is huge (like Ugh-Zan III in Serious Sam).
Dismemberment. The satisfaction of a kill in Chivalry is times a thousand if it's a beheading.

I like when characters have holsters or something to hold their weapons instead of the guns magically floating on their back.

I gotta agree on all counts, Blood Dragon's animations are just awesome, Killing Floors are very realistic and well done, and Metro's are pretty immersive.
Good gameplay mechanics.
Good story line.
Good dialogue.
Everything must be good, or perfect, at least.
Full realistic destruction to the environments or buildings.
Red Faction: Guerrilla did a wonderful job at that, can't wait for fuck shit up: the game...

Whenever I play a new game and I notice these, I come so close to creaming my pants.

Little touches in games that they really didn't have to put in but they did. They really add a lot to the entire experience and make it stand out so much more in my mind. For instance in Far Cry 3, a poker match near the end, as the dealer is pulling the cards back to him one of them gets caught on a chip and he has to reach back out to get it.
There can also be story threads, like in Dark Souls. There's a lot of story that you have to kind of put together yourself that makes the game feel like others have been through there. Best example I can think of is Black Iron Tarkus. You can summon him for the fight against the Iron Golem, and then in the next area you can find a body with black iron armor on the ground in a cathedral, under a section that requires careful balancing. Or the stories behind Pinwheel, or almost all of the bosses, really. Like, they could have just made a cool boss design but they made lore behind so much stuff that they didn't really have to, and you can only see it if you go looking for it.
Another game that's chock full of little details (in a different way than Dark Souls) is The Last of Us. Now, no matter what you may think of the game itself, it's undeniable that they put a lot of effort into making the world feel like someone once lived there. Just by walking through people's houses you can see so much care put into everything; each house, and even each room, has its own personality that points toward the kind of person that used to live there. In one apartment, you can gather that the family was of Mexican descent, and at least one of the parents was Inca. Their son was a big fan of Jak and Daxter (well, it is a Naughty Dog game), the mother enjoyed cooking traditional Mexican dishes, and the father read a lot.

Amazing storytelling that use tools only possible in games. The first Bioshocks mindblowing scene with Ryan, choice systems, etc.
Euphoria. Basically any animation system that tries to make characters react to their environment.
Customization, big and intimidating enemies, cool guns, colors, immersible and non-mediocre story, and no unnecessary crap that drags the game on (driving for 15 minutes to the next mission, pay to win shit, etc)
