Yea, it would be dumb to not get a DX11 card of some sort. If you did go with what is out now, I'd buy two 275's or 260's and SLI those bitches. I have that in my setup and it runs game like a camp!
Seriously though, wait for DX11 or get a ATI card of some sort. Also, go for the 12 GB of RAM. You may not need it now, but you will later. Especially if you are going to keep this computer for a while.

I can order another pair of Corsair sticks in the future no problem if I see a performance drop. And I'll probably just wait for Nvidia's new cards then.

I think the board is fine for the reason that you can SLI or Crossfire two duel slot cards on alternating slots. Much better airflow. For example:

Card2

...ect....
Power supply is an important part of the computer, I think it is fine as it is... personally.

get a cheaper board that has the same features.. and it's not that bad if you have a good case. My HAF-932 is fine for my two GTX 275s, for one 5970 it should be fine.
in a SLI/CFX setup the top card will be hotter because it has to suck the heat off the bottom card, so just turn the hot card's fan up if it's really a problem.
and you don't near 1000W..
and a 5970 should be enough, it's faster than two GTX 295s
One thing I'm not understanding is, Computer Case-Motherboard compatibility. My motherboard says EATX, and my tower just says ATX. What does this mean?

I'd rather wait for Nvidia's new cards to be honest, they are just what I like, and grown up playing with. Not being a complete or total fanboy or anything lol.
As for the PSU, I want some room for upgrade, as well as just some slack to work with in general. Cause I don't want to be gameing with the psu sitting on the maximum possible.

ATX is the form factor of an average motherboard which is 9 by 12 inches. Extended ATX is basically an extension of this form factor for more high end usage and is usually 12 by 13 inches. It won't fit in your case.
By the way...Apevia makes the shittiest cases you can ever possibly buy. Don't go with Apevia.

4 x 30GB SSD, level 0 raided for insane hard drive performance.
Two water cooling systems. One for the CPU, north bridge and south bridge, the other for the graphics cards.
15000 SCSI hard drive for fast data storage.
I just wanted to give a few ideas outside of CPU RAM MOBO and GPU stuff.

I have a Xonar DX and it's just fine for games as it can deliver positional sound over a decent pair of stereo headphones with Dolby Headphones and DS3D GX 2.0.
