Looking at building (2) light duty office computers <$1000

So I've got a pretty basic build fleshed out, just curious about what others may suggest.. Not really too biased AMD or Intel, not really specific brand loyal either. Would like to keep the price <$1000 for both (including shipping, located in the US), though the budget can be stretched a little. Don't need OS or any peripherals, will be running Win7 (32 or 64 bit possible).
One machine is going to be pretty much just light duty, general office stuff. Internet, e-mail, basic Word docs, pdfs etc. May run some billing software (things like QuickBooks etc) on occasion but not full time. Nothing very computer or graphics intense. Going to spend good portion of it's life at idle or even off. May become a sort of file server at some point, just basic LAN file storage. Not likely but is definitely a possibility. Would consider going RAID-1 if it did become file storage.
The other machine is going to end up pretty much a 24/7 "security monitor". There's about a dozen IP cameras on the network, current machine is hooked up to dual monitors, currently 1280x1024 res I believe; would be nice to be dual 1080p display capable (maybe even 3 display capability?) just in case but not entirely necessary. Machine does not really store any files or run any programs. Current machine just a basic OEM; It is 5+ years old and needs a restart every few days because it starts getting a little choppy. Only replacing it because the business currently has some money and would rather upgrade now and have backup computers/salvage parts (power supplies, fans, etc). Considering going to [URL="http://www.newegg.com/Product/Product.aspx?Item=N82E16820226236"]an SSD[/URL] just because it doesn't need a lot of storage and would likely benefit from an SSD. Also considering dropping the Antec case in favor of something more like [URL="http://www.newegg.com/Product/Product.aspx?Item=N82E16811204037"]this[/URL] for this machine but not entirely sure.
Usage of both machines is subject to change and could both potentially become full-time office machines to be used on a daily basis for internet, e-mail, billing software etc. It's not very likely but I prefer to over-build and be prepared than go the other way.
This is what I have come up with as a rough idea, so far. Going to most likely add an inexpensive, low-end graphics card (one of the machines to be replaced has a 1gb GT630 in it now that would be salvaged) to take some load off the CPU in both cases:
