I'm going to be getting a R6850 soon.
I don't know much about manufacturers (which ones to trust, which ones are better etc)
Which manufacturer should I look for/get it from?

Asus are good.

I'm not looking into overclocking it big time, what else will a good fan do?
Be quieter.
Asus, always Asus (sometimes MSI?) because they come with 3 years of warranty as opposed to the usual 2.
Also getting lesser reputable brands to save a buck is a really bad idea.
I bought a 9600gt from albatron because it was a bit cheaper, fan crapped out after 2 years and 3 months. It had 2 years warranty.
Since they're all around the same price on Newegg, I would get the XFX version for its warranty
Also after the fan broke on my 9600gt I did this:

Funnily enough a $3 ricer case fan cools about 20 degrees C better than the stock cooling and is way quieter.

I use a Gigabyte HD 6850 with a Windforce cooler that's very effective, it only crawls up 8 or so degrees under load

Same. Almost.
It idles around 39C for me. It only gets to around 56C under load. And that might be sort of high, since I have a Firewire card right in front of it, which probably doesn't give the best airflow but it hasn't felt the need to max out the fans yet so the card itself is actually really quiet.

Basically, get anything besides Powercolor or Diamond
Powercolor is usually kind of bad, and Diamond is overpriced.
EDIT:
The powercolor has some good reviews this time, wouldn't hurt to buy if you needed to.
