The sound design behind this game is stunning, it shows just how much sound can be used in a game to completely immerse the player. Even to this day there's only very few games that are immersive as this game is.

Take your pick.
Bioshock Infinite, Deus Ex Human Revolution, Remember Me, and The Last of Us.
I picked these four because there story.
Dishonored was pretty good too.

Pretty much of all the Thief games. They have this really interesting underlying setting and lore, but it's introduced in subtle ways. I actually felt like Dishonored was trying a little too hard to get it's setting across. For most of the story, it seemed to me that the game was constantly going 'check this out. Whale oil, isn't that cool? Or this guy. Read this dude's backstory. Wow, check this thing out. Real deep, right?'
I really want to be optimistic about the new Thief game.
Metro 2033, Amnesia, Brothers, Chivalry.
All three S.T.A.L.K.E.R. games, jesus that game series is amazing. I remember freaking the shit out at 3am when I was in the x-labs getting boxes thrown at me from the poltergeists... I was like....shit IMMA DIE IRL NOW...

I liked the setting of Dishonored, but the stealth in it was very weak and relatively pointless, seeing as you have no real consequence of barging in and killing everybody.

Couldn't agree more.
Anything from the dissonant noise the game makes when you start a new level, the random conversations that the NPCs hold throughout the game, or the dark and sinister atmosphere gives this game fantastic replayability.
I advise anyone to buy this game on Steam. (Thief Gold)

I remember playing it and suddenly it's 12 hours later. I just forget about what's going on around me when I play it.

Half-Life
I'd say that Half-Life 2 was a lot more immersive. As much as i love the first, it's not the best aging game.

this game has a special place in my heart.
it was the first actual great western game that I've played, and with the great gunplay and story I just think it's awesome. And at the time the graphics were really amazing.

I just recently got this game and I heavily agree, The Thief Series is up there with my other favorite games and more people really need to play this and its free spiritual successor (made by fans) The Dark Mod, they are all really great games with great gameplay, story, and atmospheric elements.

This is also a pretty great choice.
Fallout: New Vegas
Great sound design, great story, great level design, great voice acting, great characters... I could go on for hours about everything great in that game.
I'd have to go with the first Call of Juarez too.
The levels all felt really cool and the atmosphere was awesome.
The gameplay was fast paced and really satisfying plus the fact that it had a map editor made it to my most favorite
games list.
It was truly incredible for me when I first played it.
Walking Dead, L.A. Noire, Heavy Rain, GTA 5, Fallout 3, Fallout NV, Bioshock 1 and Bioshock 2.
Dear Esther,oh wait you said "game" right?
Then Fallout, pretty much all of them...except...Brotherhood of Steel.

It's really the facial animation and characters that make it the most immersive game I've played. I don't think I've played a game yet where the characters feel as real as they do in the HL2 trilogy.

Other great atmospheric games like Half-Life 2, the Stalker games, Bioshock and etc... are already posted so yeah

I see what you did there.
Honestly, this game is pretty far up there.

It is an excellent (and surprisingly atmospheric) Nintendo DS shooter with graphics on par with Metroid Prime Hunters.

Also, Dementium (which is by the same devs as Moon) is a spooky, and atmospheric first person survival horror on the DS

I may be alone here but I thought Skyrim was pretty immersive.
Dark Souls. I've become a rabid fanboy.
Apart from that Morrowind, Bioshock(1,2,infinite), HL(1,2), Batman Arkham Series, Penumbra + Amnesia, Outlast, Uncharted, Splinter Cell, Dear Esther, LOZ (all), but mostly, so far the most immersive was Shadow of the Colossus. So many more as well...
