I'm looking to upgrade my Dell XPS 720 and I have a few questions.
Heres the specs:
Processor: Intel Q6600 2.4Ghz
RAM: 4GB
Graphics: 8800GTX in SLI
OS: Windows 7 Ultimate 64bit
Right now I'm using 2 24inch monitors at a resolution of 1920X1080
Would a single 480, or even 460, give me the performance of both of these cards?
Is there anything I can upgrade to on a decent budget of about ~$500?
And how badly will this processor bottleneck the cards I want to get?
Right now I feel like I can run many games on high, but I'm pushing my graphics cards to the limit. So far I have looked at:

The games I'm looking at running on max settings are the STALKER series, Fallout 3/New Vegas, Mass Effect 1/2, Supreme Commander 1/2. If I can run all of these games on a slower and cheaper card then that works, I'm not looking for the latest and greatest.
A GTX 480 would be bottlenecked by a Q6600 but it wouldn't be noticeable in very many games. The ones you listed are mostly GPU heavy except for Supreme Commander, but SC utilizes quad cores very well I believe.
A GTX 480 would surpass your 8800 GTXs easily.
Well I can get two 460's for the price of a 480, but I'm also looking to not spend all of my money. Would a single 460 do the same? Will two outperform a 480?
Yes two 460s are better than a 480, but honestly I would stick with a single GPU setup. I've used Crossfire and SLI before and they're pretty big hassles.

You know what, I've looked over the benchmarks and the scaling is unbelievable, go with two 460s if you can.
I'd still go with a single GPU.
Also get an aftermarket cooler and oc your processor.
A single 480 will be easier in the proc that you have.
