Honestly I sometimes let go of the steering wheel but never for more than a couple seconds to like, fiddle with my pants or something, and only ever on a straight road outside of any town and with no cars ahead of me. Putting your hands behind your head is kinda pushing it.

That argument is completely and totally undermined when they are used by law enforcement to levee penalties against people for meaningless, pathetic "crimes" like taking your hands off the wheel for a few seconds, which EVERYONE has done. The mere fact that they have time to use cameras for this shit tells me they aren't worth it.

The issue here isn't that a police van caught him in the act, it's the fact that for 30 seconds he literally, for most likely stupid reasons, increased the hazard of being in a car by quite a bit.

For fuck's sake, go after those people if you absolutely must use cameras to go after petty driving offenses. Or the people shaving and eating breakfast on the way to work. I basically equate this with jaywalking or spitting on the sidewalk on the overall scale of crime severity. If the cops didn't have cameras as a crutch they would never bother to do a thing about it, but the ubiquity of CCTV lets them go after literally anyone for literally the most inane justifications they can think up. Point a camera at anyone for a short period of time and you'll probably see them to something they can legally be arrested or cited for, case in point.
