• What should I cook for my exam?

I have yet to decided on what to cook for my practical exam, and I'm not too sure, so I'm hopping you guys can help me with the dishes....... I have 2 and a half hours to cook 6 different dishes, and all of them must be low preservatives, and no processed foods. Oh, and its for health conscious people also. Oh, and I've chosen western food. Oh, and I'm not allowed to cook any dishes involving pork or beef, due to religion. And now, the dishes I am making: Starter: Bruschetta or Soft boiled egg with smoked salmon, asparagus and caviar? [url]http://www.womanandhome.com/articles/food/recipes/293252/soft-boiled-egg-with-smoked-salmon-asparagus-and-caviar-recipe.html[/url] Appetizer: Chilli roasted potatoes or parmesan potatoes or stuffed baked potatoes or canadian gravy fries Soup: Cream of onion soup in a bread bowl( But I have no idea how to make a soughdough bread within 2 and a half hours) Main course: Chicken with creamy mushrooms. Either that or some grilled fish [url]http://shine.yahoo.com/channel/food/recipes/chicken-with-creamy-mushrooms-535303[/url] Dessert:Crepes or some strawberry dessert I will make the decisions myself, but I hope you guys can suggest what to cook.[/QUOTE] For the bread use a poolish/sourdough starter mix to speed things up a bit, but tbh yeah you're gonna have to use commercial yeast as the rising agent, if you try and warm it enough that the culture would do its thing in 2 hours the flavours won't be developed enough and it'll be much more risky as to your final outcome the healthiest sounding ones are the chilli roasted potatoes, bruschetta, (consider doing a broth instead of cream of.. soup), something to do with the grilled fish (look in to what you could do with lentils too) For the dessert maybe do a fruit Compote

Anymore suggestions? I'm gonna have to finalise it tomorrow. Oh 1 last thing, would it be nice to do either duck or lamb for the main course?
