Trademark is for logos not names. And even if it was for names, you still couldn't trademark an ordinary word like chipotle.

what you're thinking of are the people using the name to misrepresent x company.
the guy with the twitter handle @chipotle isn't doing such a thing so chipotle doesn't have any grounds to file a trademark violation.

There was also a girl named Chelsea who adopted early on Twitter so her username was @chelsea naturally she got Tweets from angry football fans on a daily basis.

Chipotle is the name of a smoked chili. That would be akin to shutting down a handle called "Grilled cheese sandwich" because a famous company adopted that name.
Will Smith at Giant Bomb gets tweets from Perez Hilton and stuff all the time. It's pretty funny.

Twitter is just a company. The person with that account simply has that data stored in their database, it's not like it's a registered thing.
Even if Chipotle tried, it's not like anyone's entitled to have ownership of a set of data in their database, if that makes any sense. It's pretty much the property of Twitter.
