This just seems like such a horrendously expensive idea. Plus it'd be an absolute nightmare to land on

Well if you can't steer you'd have trouble landing in a straight line too.
Runway slope is already a problem that pilots need to compensate for. Now imagine a pilot trying to land on an oversized nascar trap...

You'd at least veer off at an angle that works with a straight one

You don't drive off of the runway when you steer straight if the runway is at an angle.

That only counts on actual circular runways that are level.
