Don't get me wrong, Silent Hill, Resident Evil and Final Fantasy are all awesome game series. But they are also obvious choices. What I am asking is good games that are less....obvious?

WipEout 2097 isn't that great on PS1, it's way too unresponsive.

These games were my childhood
Metal Gear Solid 1 was widely regarded as the best game that came out on the PS1, so definitely that.
Medevil is also another game that really defined the console, so at least the first one of those games.
The Spyro series is also really good so maybe consider getting them.

LSD Dream Emulator (it's exactly what you'd think and then some)
Hogs of War (Worms but with pigs)
Legacy of Kain: Soul Reaver (3d metroidvania with vampires and actual storyline, also lots of puzzles)
Castlevania: Symphony of the Night (Metroid with swords...and vampires...and RPG mechanics...and fighting game inputs for special abilities...and low resolution nudity that still slips by with a T rating [that succubus would get it banned so fast if it was a modern game])
Abe's Odyssey and Abe's Exodus (best 2d platformer/puzzle games you will ever play, also still look pretty good due to pre-rendered graphics) [side note: the first game is way harder than the second]
Deception series (people try to kill you. you lay magic traps for them. profit.)

If you're In for shooters, I'd recommend G-Darius, Einhänder and R-Type Delta. I've spent DAYS playing those compulsively.
Well, there's the ones people already suggested but I'd STRONGLY recommend too; Crash Bandicoot, Spyro The Dragon, Klonoa: Door to Phantomile, Castlevania: SotN, Medal of Honor.
And, then, there's Driver 1 & 2, Apocalipse, Road Rash, Tenchu: Stealth Assassins, Crash Team Racing and some I can't recall.

Only one I can think of off the top of my head that isn't really "Mainstream". The irony is I have my PS1 collection near by and a majority of the games in it ended up becoming "Mainstream" over the years, when I originally bough most of them because they look/were fun.
