The models and such from newer generations of games just isn't as unsettling to me as sprites from doom or early 3D models like that of Half-Life or System Shock 2. There was literally zero things in Dead Space that made me unsettled to look at and about the same for even Amnesia.

I honestly think this is more a product of desensitization.

i remember the zombie from oblivion being the scariest fucking thing on early
now i am a big boy and i find mustard gas victims to be tame

Idk, I played Doom after I had played Dead Space. Also the midwives from SS2 are still one of the most unsettling enemies I've encountered.
Nigga I'mma show you scary

I just don't find them to be disgusting because I'm too busy appreciating the models, textures, and animations.
Bloodborne has some really unsettling enemies though and it's not even a horror game but you don't really get to appreciate how disgusting they are because you need to get out of the way and kill them

To a degree, but I think it's also caused by how crude graphics and jagged edges appear unnatural, unsettling and details can be hard to make out
In other words, high quality models do not leave room for your imagination to fill in the gaps

Fuck System Shock 2's hybrids. I remember quitting the game after hearing the first one urging me to kill it.
Then again I was pretty young. Still, tho, fuck that shit.
The nurses too, what the flying fuck.

Honestly the hybrids still are pretty damn freaky. It's like the stop motion animated monsters from evil dead, a lot of the scariness comes from the animations themselves not being too organic.
It's just a matter of giving original traits to your monsters, both in appearance and in behavior. For instance, I'm playing Dragon's Dogma currently, there are generic zombie undead walker guys, but the interesting thing about them is that they sound like their voice is coming from a speaker, and that's genuinely unsettling

bloodborne monsters did a pretty good job making me unsettled. A few dead space 2-3 enemies too

That one was scarier
What I love about this guy is how he is mechanically integrated into the game.
Those hands are easy to avoid normally, but the very second you go into Z-Targeting you easily lose focus and/or sidestep into them by accident when yo try to avoid or dodge him.
Sometimes there is more to a monster than its visuals.

I disagree though. There is a way to create something unsettling that still is modern. Take Bloodborne for instance, it's not even a horror game by itself but it has some amazing designs and there are some really messed up things that you encounter. The game just adds dignity and background stories to those characters that you encounter, which makes it more unsettling and important.
Take The Evil Within as an example, just some dudes that look really fucked up but it's plain boring and not special. Even if they look hideous, it's a matter of how you present these horrible things to a player.
Cry of Fear has some weird as shit enemies.
I think the settings the creatures are in help make them scarier.

Is it, though? I started playing System Shock 2 for the first time last night. I noped out of it in roughly the same amount of time I played Half-Life 1 for when I was around 5.
I managed to play Dead Space for a few hours the first time, until I'd finally had it with constant jumpscares, bad mouse control, and a shitty camera fov. Why bother making a game third person if 1/4th the screen is taken up by my back?

When I was in grade school I couldn't beat Ocarina of Time because these guys were in Hyrule Town after you became an adult and they freaked me out so I pussied out.
