How well do plastic notes fold in wallets? I can imagine them having big creases in them after a while.

Canada has already replaced the old bills into plastic ones. The only issue with them is that they stick to other bills (as in they merge completely perfectly together due to static electricity) which can cause a few mistakes if you're not careful when handling them. As a cashier, these bills are a bit of a pain sometimes, but they're much more resistant than the old ones, so that's a plus.
Everytime someone says "it can't be counterfeited anymore" on new bill designs, the government still accepts old designs who's to say they can't just counterfeit older designs
