It's a extremely terrible instructor, she got over almost a hundred terrible reviews on ratenyprofessor, she is clumsy as shit. Anyways. The assignment was worth a hefty amount of points, and I will actually fail the class if she doesn't input it soon. Grades are officially up in next week, and everything else is up in the gradebook. What the fuck do I do? This is only a community college but it'll completely fuck up my gpa to transfer into state. This is bullshit because I even asked her if everything was okay and she said that I am not missing anything. I then went spring cleaning in my room and threw away all my old assignments (I still have them backed up in a flash drive though). I been trying to email her but she doesn't bother to even read her emails apparently (I sent like 3 emails this week).
Why not just arrange a meeting with her or speak to her directly about it once again, explaining what the problem is? If she still doesn't give a fuck you may need to approach higher ups.
Go to the department office and talk to the secretary/department head. You've already tried contacting her multiple times, and now you should move up the chain.
She went completely mia after the last day of school and I think she won't be back in town for a few months
Then go higher up the chain, speak to a department head and see what they can do about helping you.

Yeah, if she isn't responding to emails, go into her office and ask if you can talk about it and tell her how you're worried you might fail and potentially ruin any chances of getting to a college you want. If she's still no help, I'd advise speaking to your head tutor or principal or however the fuck it works.
Yes, you have legit proof, that'll work out for you. If they insist on a fair copy being made again, allow one day for that too, but only if they themselves insist on it a second time.

Okay I'll have it a shot. @Crypto, what about my emails to her? She hasn't responded and the first email I sent to her was a week ago, saying I already turned it in.

If you haven't done anything to the assignment, you're good imo.
